Quiche Recipe...its easy!

 

 
We all loved the awesome spinach quiche that was brought on Tuesday. Esther is sharing her super easy recipe with us. Thanks Esther!

Ingredients:
  • Pie Crust (pillsbury)
  • 1&1/2C heavy cream
  • 6 eggs
  • baby spinach
  • 1C pepper jack cheese
  • salt and pepper to taste

place pie crust in pie or quiche pan. Spread baby spinach and cheese in pie crust. Blend eggs and cream and pour over other ingredients.

 
bake in oven at 350 for 35 to 45 minutes till egg mixture is set.

Stable or Trail….you choose!


I was ready for the experience of a lifetime. The plan was perfect (or so I thought) horseback riding through lower Yosemite Valley. According the brochure this experience would be amazing, picturesque, and all together splendid. Obviously the trail guides had not reviewed the brochure, reality was very different...ever been there?

Five minutes into the adventure I was ready for full refund and a quick return to the stable. Instead I decide to push on and TRY to overcome my fear, release the death grip I had on the reigns, and learn from those who seemed to be doing it well (at least it looked that way). I will say by the second hour things improved. I was glad I got to experience the beauty of Yosemite in such a unique way; although, in case you’re wondering I wouldn’t recommend the 2 hour ride for beginners.

In the end I was reminded that great experiences come with great risk. You can’t start the trail if you never leave the stable. So as we begin this journey together I hope this year is filled with joy, adventure, risk, and growth. I hope we all look back and see stable behind us and the trial in front of us…pursue the adventure.

Summer Study May 24th Highlights

Today was the first day of our Living a Life of Balance Study. What a great first meeting the sun was out and a half of my body is burned, I think that is officially worse than a farmer tan.

We covered a lot of great information I wanted to share a few highlights with you.



  • Worry is a waste of time
  • Nakedness can equal opportunity (focus on the anklet)
  • Don’t envy others fruit
  • If you’re an orange tree you will never grow lemons (stop trying)
  • Finish 1 thing then move on
  • Forgiveness if for you (its a choice)
  • Don’t just listen do something
